I am getting to the point where I want to test print my PKE meter but I am struggling to find a screen that will fit.

There is limited internal space so the screens that use Arduino Mega/2560 wont fit. PiTFT wont fit either.

I don't want to use a mobile phone all i want to do is to have a video play as soon as it is turned on.

The hole for the screen is 57mm x 64mm. Thickness wise it can't be any more than 20mm.

Have you looked at screens from digital cameras? It's believed by some that the screen in the screen-used prop may've come from a digital camera (though it's very likely that it only displayed a green screen while the scenes were being shot, and the graphics were added in post-production).
